Apple and Hazelnut Pudding Recipe

    This is a very simple pudding recipe, done in a traditional way. The applesauce is sweetened with the honey and has a little bit of a lemon flavor that is added by the lemon skin that is added while it is cooking. The older the breadcrumbs are the better since it will be dryer. Avoid cooling the pudding for too long because otherwise the breadcrumbs will become soaked in liquid. 

    Preparation time: 20 minutes plus refrigeration time
    Cooking time: 30 minutes
    Makes: 4 servings

    Ingredients
    3 apples to cook, peeled de hearted and chopped
    2 teaspoons of lemon skin
    1 teaspoon of apple juice or water
    1 and ½ teaspoon of fresh grated ginger
    50 grams of grapes
    2 tablespoons of liquid honey
    75 grams of whole wheat bread crumbs
    2 tablespoons of brown sugar
    50 grams of sliced and toasted hazelnuts
    1 teaspoon of cinnamon powder for decorating
    Fresh cream, yogurt or fresh cheese for the side

    Preparation

    1. Place the apple in a pan with the lemon peel, the apple juice or water and the ginger. Put it over high fire until the apple pieces begin to soften, stirring from time to time. Once the apple begins to let off its juice, add in the grapes. Cover the pan with a top and let it boil over low fire from 10 to 15 minutes or until the apples have become clear and soft.
    2. Take the pan off the fire and stir with a wooden tablespoon until you obtain a slightly thick puree. Add honey to the taste, stir and remove the lemon peel from the pan.
    3. Heat up a large frying pan and add the breadcrumbs and toast it while constantly stirring, until it acquires a light golden color. Add in the sugar and the hazelnuts. Then, take it off the fire, while still stirring. Leave on the side and allow it to cool.
    4. Once the bread mixture and hazelnuts has cooled down, break it down in half with the back of a spoon to form barons. Pour 2 tablespoons of the applesauce in one of the four cups, and then cover them with the breadcrumb mixture. Repeat this process and with the rest of the applesauce and the breadcrumbs.
    5. This can be served right away or it can be refrigerated for 1 hour. Right before serving it out, sprinkle the puddings with a little bit of cinnamon powder and if you like it can be served with fresh cream, yogurt or fresh cheese.
