Ingredients
125gr flour
A dab of Salt
50gr glazed sugar
50gr of butter
2 egg yolks
Filling
750gr apples
2tsp powdered cinnamon
125gr sugar
1 small cup of water
2.5dl milk cream
150gr brown sugar
Preparation
- Sift flour and salt on a board or on table.
- Make a hole in the center and place the butter, sugar and egg yolks.
- Work on the sugar butter and yolks with your fingertips until it’s all mixed together; add flour slowly and mix lightly.
- Leave the dough in a fresh place for an hour, extend on top of a floured surface, form a thin cover and cover 6 detachable molds with it.
- Cook at a moderately heated oven for 15 minutes in which they will have gotten a brown color.
- Cool of in a fire grate.
- Peel the apples and remove the core, cut them in slices and put them to cook in water and brown sugar (before the apples un-do we must remove 12 slices to decorate the cakes).
- Let the apples boil until they become puree.
- Place the puree on the six cakes, make small holes on the top of each cake and place 3 slices of the cooked apples on each, cover them with the milk cream and the glazed sugar.
- Place the cakes into the oven until the sugar caramels.
- Serve very hot.
Practical advice
The best apples for these cakes are the red apples.
