Barbecue Fish Recipe

    It is best to choose fish that have firm and solid meat such as: tuna, salmon, trout, swordfish and sole. When barbecuing fish, try placing lemon slices on your aluminum foil before wrapping the fish. This prevents the fish from sticking to the foil and adds a delicious lemony flavor that's lovely with salmon.

    Barbecue Halibut
    This halibut has the simple, delicate flavors of lemon and basil. Serve with grilled vegetables or over rice.

    Ingredients
    4 halibut steaks
    2 tablespoons fresh lemon juice
    2 tablespoons olive oil
    2 cloves garlic, minced
    2 tablespoons fresh basil, finely chopped
    2 teaspoons capers
    1 teaspoon lemon zest
    salt and pepper

    Preparation
    Preheat grill for medium-high heat. Season fish with salt and black pepper and place onto grill. Cook for 5 minutes per side. Combine remaining ingredients in a small bowl. Let vinaigrette sit while fish is cooking. When halibut is cooked, remove from heat and drizzle with vinaigrette.
