Cheese Pastry Recipe

Ingredients:
150grs of flour
75grs of butter
75grs of grated gruyere cheese
1 egg
Pepper
Salt

Preparation:
Make a circle with 125grs of flour in a marble, make a hole in the center and place the diced butter, the salt, the pepper and the egg yolk in it. Separate a little egg yolk and grated cheese on the side. Join the ingredients slowly and work with your hands until you get a fine dough that you will let rest for ½ hour. Sprinkle the marble well with flour and stretch the dough with a roller giving to it the thickness of ½ cm. cut the dough in discs with a pastry cutter or a similar purpose utensil.

Prepare an oven tray which should be buttered and place the discs on it, wet the discs with the reserved beat egg yolks and sprinkle the grated cheese on them. Turn on the oven and let it heat well before placing the discs into it, bake the discs at a moderate heat until they brown.
