Chijaukay Chicken

    Ingredients
    ½ boneless chicken, cut in fillets as for flour-coated steaks
    Soy sauce
    Cornstarch
    Salt, pepper and monosodium glutamate

    Sauce

    2 tablespoons mensi
    1 unit star anise
    1 – 2 finely chopped garlic
    ½ tablespoon sugar
    ½ cup water
    Salt to taste
    Potato flour
    Soy sauce

    Preparation

    1. After cutting the chicken in fillets, season and rub soy sauce on them to stick flour. Then, coat them with cornstarch, pressing first the fillets on the flour and then shaking them to remove excess.

    2. Fry in abundant oil until golden-brown. Cut into approximately 2-cm cubes and place them on a large tray.

    Sauce

    1. Heat up some drops of oil in a frying pan; add the mensi, garlic, anise and water. Boil and sieve. Season with salt, sugar and seasoning. Thicken liquid with half a teaspoon of cornstarch dissolved in little water- Add few drops of soy sauce to enhance the color. Cover the chicken with the sauce and serve.

    Tips

    1. The dish will be tastier if you add spring onion stalks
    2. The preparation combines well with white rice.
