It is an original and simple way of preparing crabmeat which is delicious when combined with fried rice noodles. When we were trying out the recipes, this was one of the most admired preparations.
Ingredients
300 grams of crabmeat
4 tablespoons of vegetable oil
2 teaspoons of crushed garlic
1 cup canned mushrooms; if the mushrooms are too big, cut them in half.
12 boiled quail’s eggs, without shells
½ cup chicken broth (preferable) or ½ cup of water
2 tablespoons spring onions sliced in strips; discard green leaves
4 slightly beaten egg whites
50 grams Serrano/Jabubo/Parma ham, sliced in these strips
50 grams rice noodles, spaghetti type (may fan)
2 teaspoons sesame-seed oil
1 teaspoon salt
1 teaspoon Aji-no-moto seasoning (monosodium glutamate)
½ teaspoon white pepper
Preparation:
1.Place four tablespoons of oil in a deep-frying pan and stir-fry the garlic. Add the cleaned crabmeats and stir-fry slightly. Add the mushrooms and stir-fry for 3 minutes. Pour in the broth with quail’s eggs, seasoning, salt and pepper. If the mixture is too thin, add a pinch of potato flour or cornstarch dissolved in little water. Stir in the egg withes to unify the mixture and then the spring onions. Mix well and add the sesame-seed oil. Serve over fried and warm may fan. Place the ham over the preparation.
2. To cook may fan; break the noodles with your hands. Heat up 2 cups of vegetable oil in pan. When hot, stir in the noodles; they will swell slightly. Remove immediately do not let them get golden brown. Drain thoroughly and pour the preparation over them.
Some tips:
1. Instead of using canned mushrooms, you may use previously stir-fried fresh ones.
2. Another alternative is to use straw mushrooms. They are tastier but are sold only in specialized shops.
3. You can also mix mushrooms and straw mushrooms, leaving out the eggs.
4. If you do not find may fan, replace them with fan si (vermicelli) thinner soybean noodles.
