Ingredients
100 grams chicken breast, cut in 3-cm cubes
20 grams tiger shrimps tails
½ small broccoli, cut in pieces
8 units jolantao
50 grams white or green asparagus, cut in 3-cm long sticks
3 boiled quail eggs. Without shells
1 tablespoon soy sauce
20 grams thinly sliced canned mushrooms
3 thick slices of braised pork
3 medium-size slices of braised duck
1 teaspoon shredded ginger
2 spring onion bulbs and stalks, cut in 1-cm long sticks
salt and pepper
monosodium glutamate
sugar
1 bottle vegetable oil
cornstarch
chicken broth
Crispy Rice
1. Cook 100 grams of rice without salt or oil. Once cold, put a thin layer in an aluminum tray and press from the sides to the center until a compact mass is obtained. Bake in the oven at medium heat until it hardens. Cool it. Cut eight 4-cm long pieces that will be fried later.
Preparation
1. Clean the tiger shrimps removing the intestines from the back. Mix them in a bowl with ½ teaspoon of seasoning, 1 teaspoon of sugar and another of cornstarch dissolved in little water. Marinate for 10 minutes.
2. In a pan, boil all the ingredients, except the crispy rice, soy sauce, oil, broth, ginger and spring onions. When slightly cooked, drain and set aside.
3. Heat oil in a pan and stir-fry the ginger and spring onions. Stir in the cooked ingredients and add ½ cup of chicken broth. When it boils, add some salt, 1 tablespoon of soy sauce, ½ teaspoon of seasoning, 1 teaspoon of sugar and 1 of cornstarch dissolved in a little water. As soon as the sauce thickens, turn off the fire.
4. Pour a bottle of oil in a pan. When it is very hot, stir in the pieces of rice and as soon as they start to fry, remove and drain. The rice will swell. Put the rice on a plate and pour over it the previous preparation.
Some tips
1. You may omit the braised duck ingredient. You may prepare braised pork at home.
